Family Sundays

Text recoveredPossible duplicate

I enjoy Sundays at home. It's a luxury we don't often have, given how packed our schedules are

One of my pleasures of staying at home is being able to cook for the family. I often cook a big wok of beehoon or a pot of curry and we eat it for the entire day. This Sunday was different as I decided to cook 2 different types of pasta. Irene was delighted at having home cooked pasta again after so long.

My strategy is to buy some ingredients that can be split into 2 portions to be used in the different recipes. This means we don't have to eat the exact same thing, yet I don't need to buy too many ingredients.

For lunch we had Pacific clams with mushrooms, corn and sunflower seeds in white wine sauce.

6 easy steps

1) Boil pot of water and throw 250 g of pasta in to cook until al dente. Remove from pot and run under cold water to stop it from cooking further.
2) Heat up wok (or large pan) and add 2 tablespoons of olive oil.
3) Add sliced mushrooms (half punnet), corn kernels (half can) and 2 teaspoon of sunflower seeds (I used our home roasted ones). Fry until mushrooms are cooked.
4) Add Pacific clams (I use canned), 1 teaspoon of salt and half cup of white wine. Continue cooking for 1 minute.
5) Add pasta and cook for another 2 minutes, allowing the pasta to soak up the sauce.
6) Remove from fire and serve immediately.

For dinner we had minced beef with mushrooms, corn and fresh tomatoes in tomato sauce.

6 easy steps

1) Boil pot of water and throw 250 g of pasta in to cook until al dente. Remove from pot and run under cold water to stop it from cooking further.
2) Heat up wok (or large pan) and add 2 tablespoons of olive oil.
3) Add 300 grams of minced beef. Fry until beef is half cooked.
4) Add sliced mushrooms (half punnet), corn kernels (half can) and fresh tomatoes. Fry until mushrooms are cooked.
5) Add tomato puree (I use canned), 1 teaspoon of salt and a pinch of Italian herbs. Simmer for 3 minutes
6) Remove from fire. Add pasta, mix in well and serve immediately.

The best part about this is you can substitute any ingredients for something else or just use what is available in your fridge. Easy cooking for family Sunday, with leftovers for lunch tomorrow. Total preparation and cooking time for each meal was 30 mins. Total cost was around $25.

Zoey enjoyed eating the pasta as well. We had to strip her so she wouldn't get tomato sauce all over her clothes.
